This weekend I was looking for a recipe to use up a couple of super ripe pears in my fridge. I decided since I had some fresh romaine and an almost eaten bag of walnuts I could whip up a quick salad. I turned out pretty delicious and was so simple:
Pear Walnut Salad
1 Head of romaine lettuce
1 Pear, cut into cubes
1/4 c chopped walnuts
1/4 c blue cheese crumbles
Champagne vinagrette Dressing (I like the kind in glass fancy bottle)
Chop lettuce. Top with pears, walnuts and blue cheese. Toss with salad dressing right before serving. So easy and delicious.
Another option – Next time, if I had some crumbled bacon, I think that would be a delicious flavor combo in this salad.
P.S. – I didnt say this salad was healthy. Blue cheese, walnuts, full-fat dressing… not ‘diet’ options, but it sure was delicious 🙂
