This week, I’m hoping to try out two new recipes. With the hubs at home this week, it’s nice to give him easy recipes to work on, and I love having dinner prepped when I walk in the door at night.
Here’s one we just tried:
Crock Pot Chicken Teriyaki
7 large chicken breasts – still mostly frozen, cut into cubes
2 1/4 c chicken broth
1 c teriyaki sauce
1/2 c brown sugar
2 tbsp chopped garlic
1 c chopped baby carrots
3 green onions sliced
Put cubed, partially-frozen chicken in the crockpot with the broth, teriyaki sauce, brown sugar and garlic. Stir to incorporate. Cook on low for 5 hours. (With the chicken already chopped up, it won’t take very long to cook.)
About 45 minutes before it finishes, add the chopped baby carrots to the mix, so it can cook and soften.
Right before serving, throw in the chopped green onion.
Serve over a bed of fluffy rice – and definitely put a bunch of the sauce overtop – it makes the rice delicious!!
I loved the addition of the carrots so it wasnt just a carb and meat. Brooks (my picky eater – as of 4 mos ago!) loved the chicken and carrots. He killed two plates. Landon loved it, and I had seconds.
