Don’t you just love a quick side dish recipe that is light, healthy and fresh tasting?
I throw together all sorts of ingredients and put a dressing on them for side dishes at my house. This one was extra delicious. And it took about 3 minutes to put together (and 5 ingredients).
This would be a really great side dish to bring to a summer cookout when you like to have lighter options.
5 Ingredient Italian Veggie Salad
2 medium tomatoes, chopped
10 baby dill pickles, sliced thin
1/4 med red onion, diced
1 can Italian style green beans (I prefer not to use unsalted, but do what you like!)
Italian salad dressing (I love the flavor of the Italian make-at-home packets).
Combine all ingredients in bowl, add salad dressing to taste. Stir to combine. Tastes best when the dressing has a little time to infuse it’s flavor.
The pickles and red onion are what make this perfect… a little zing from the pickle and the mild bite of onion.
(I used whatever limited ingredients I had in the fridge. It was one of those “need to grocery shop” concoctions. Other great addition ideas – mild sliced pepperoncini’s, cubed cucumber, sweet bell pepper. Use whatever you have in the fridge!)
