I love taking my ‘usual recipe’ and finding a way to tweak it. My Hamburger Stromboli is a perfect example. Usually we do pepperoni and mushrooms with a red sauce, but the tweaked version is filled with beef, onions, mushrooms, cheddar and pickles. Sometimes the tweaks are big and sometimes it’s just changing or adding an ingredient or two.
This week, I tweaked my waldorf salad. It was a small tweak. Just the addition of an ingredient and a substitution of another. But it tasted delicious!
Usually my salad is made with raisins but this time, I wanted the tart tang of the dried cranberries to add a punch of flavor. I also added a pear to the mix – that baby needed to be used quick. It was getting brown!
Waldorf Salad with Pears and Cranberries)
1/2 head romaine lettuce chopped
1 apple diced
1 pear diced
10 grapes – halved
1/8 c walnuts – chopped
1/8 c dried cranberries (Craisins)
2 stalks celery – chopped
3 Tbsp light mayo (Helmanns)
1 Tbsp lemon juice
In a bowl, mix together the mayo and lemon juice until it is completely blended. Then add all remaining ingredients. Toss well until completely coated.
