Soup recipes are good. Crockpot recipes are good. Especially in the winter – warm food and a warm crockpot in the kitchen.
Crockpot recipes are so great during the work week when you just don’t have time to spare after work to get a full meal on the table. I threw together some ingredients for Chicken Tortilla Soup this week and it was delicious. Another great thing about the crockpot – it’s really hard to screw it up. Just add or subtract what you don’t like or what you don’t have on hand.
Crockpot Chicken Tortilla Soup
6 frozen chicken breasts
3 bullion cubes
1 can black beans
1 cup frozen corn
1 can diced tomatoes – Mexican style (like Rotel)
1 cup medium salsa
1 envelope taco seasoning
2 tablesp cumin
2 medium tortilla shells – cut into small strips
Throw everything together in the crockpot and add 1 1/2 cups of water as well to get the liquid going. I set mine on the lowest cook setting in the morning and after work it was ready. Then we just took two forks and shredded the chicken apart. Afterwards, I cut some flour tortilla shells in half and then made them into strips and mixed it in before serving.
You can put a dallop of whatever you like on top – we did guacamole – but I think sour cream, shredded cheese or fresh chopped onion would be delish!
