These bars are delicious. I saw them on a blog I like to check on – Hungry Runner Girl – and tweaked them a little bit. You think – oh, I’ll just try a small piece and next thing you know a fourth of the tray is gone. You can halve the recipe and do a smaller dish – but don’t – because these things are awesome!
1 1/2 sleeves of graham crackers – turn into crumbs with processor
7 tablespoons melted butter
1/2 cup butter – soft, not melted
1/2 cup shortening
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 1/4 cups flour
1 tsp salt
1 tsp baking soda
1 1/2 cups mini marshmallows (plus additional half cup to add later)
1/2 cup mini chocolate chips
3 Hershey bars – broken into pieces
Preheat oven to 350°. Combine the graham cracker crumbs and melted butter. Press into the bottom of a 13×9 in pan. Bake 10 minutes. Allow to cool slightly while you prep the rest of the ingredients. Should be a nice “shell” at the bottom.
Cream butter, shortening, sugar and brown sugar together. Add the eggs and vanilla until incorporated. Then beat in flour, salt and baking soda. Don’t overmix but should be a nice thick dough. Then stir in the mini chocolate chips and 1 1/2 cups of marshmallows.
Drop evenly and spread over the graham cracker crust. Bake for 20 minutes. Then add the remaining marshmallows on top. Bake for 7-10 more minutes. Pull out of the oven and top with broken pieces of Hershey Bars. Allow to cool before cutting. (But if you can’t, put some of the hot doughy spread into a bowl with vanilla ice cream and it is divine! Then you can cut the rest into pieces when cooled 🙂 )
